Strawberry Clutches
OH my word, I am so busy I cannot even tell you. I am in training all these week from 8-4:30 every single day. I got back to my desk at about 5pm to start my actual work! GAH! This is going to be a long week for me. Not to mention I have a softball game tonight and dance rehearsal. Basically I won’t be home until midnight..winning? NOT SO MUCH! haha…
Anyways, I wanted to make sure I made a quick run to do a post. I am so sorry to all of you foodies out there that I will be totally neglecting this week on Foodbuzz because of my training. I promise I will make sure to look at all your yummy treats ASAP!
I went to the grocery store this weekend and they had all sorts of fruits on sale, which made me SO happy! Produce has been so expensive lately at the stores that it is hard to justify even buying them anymore I feel like. I love fruits and veggies too much to pass them up though. I have to have them in my life, no matter the price tag. BUT! I was just really happy to see that my purse was going to be saved a little this weekend.
Strawberries were on that list of fruits on sale, I basically got 2 packages for the price of 1. SCOREEE!! (now THAT is winning!). What to do with those strawberries….
Naturally I ate half the container on the way home ;-). Along with the animal crackers I got at the store that were organic, weird but good. Check out that link above, I totally got a buffalo animal cracker with a heart on it…
Anyways, I am getting off topic here, I came up with these little strawberry “clutches”. Basically little mini strawberry pies. They are small and cute and super delicious and you can eat them with your fingers. YES! I am not going to share the pie crust recipe because it is a family secret, so use your most favorite pie crust recipe or even buy the store bought stuff. No one will know the difference 😉
Ingredients for Strawberry filling:
- 4 teaspoons granulated sugar, more if needed
- 1 tablespoon all-purpose flour
- 1 tablespoon lemon zest
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 cups sliced fresh strawberries (1/4″ thick)
- 1 egg
Preheat your oven to 400º.
In a large bowl, stir together sugar, flour, cinnamon, and nutmeg. Add the strawberries and gently toss to coat. Taste and add more sugar if needed.
Off to the side beat your egg and add about a teaspoon of water. This will be your egg wash for the top of the clutches. Put a heaping tablespoon of strawberries in a single layer on one half of each dough piece (I rolled by dough out to look like a normal round pie crust and then cut the dough into pizza slice looking shapes). Fold the 3 edges into the center and then gently press them together. Brush your egg wash over top of the clutch and then sprinkle with sugar.
Repeat this process until you have used all your filling and dough. Bake the little clutches for about 20-25 minutes or until they bake to a golden brown. Transfer them to a wire rack to cool. Serve warm or at room temperature.
