    Tomato and Basil Flatbread Bake

Hello my dears! It has been a while! I have been trying to catch up on all your yummy posts. You guys have been making some NomNom-tastic stuff! KUDOS! I am getting settled down from my way too busy for comfort week last week. Things have been so out of the ordinary for me right now. Trying to stay as positive as humanly possible! Sometimes you get so busy that you forget to take time for yourself. This weekend was ALL about taking it easy and just relaxing. I was able to finish a book (Girls in Trucks), not the usual type of book I read but definitely a cute…

Herb Salmon with Lemoned Green Beans

It’s Friday!! I am pretty excited for the weekend to be here. This week has been busy, to say the least, and next week isn’t going to be much better. Needless to say I am totally looking forward to a relaxing weekend. Maybe I will even take the bike out for a ride since it is supposed to be so nice. Winning! Whenever it is a nice out I have a really hard time not firing up the grill every day of the weekend. You can make so many different things and it always seems to taste good. The taste of food coming off the grill just reminds me of…

    Tomato Salad

Holy tornadoes!! New England had all sorts of tornado touch downs last night. There was quite a bit of damage to a lot of Western Mass cities. Scary because I spend a lot of my time in Western Mass! I mean I have seen my fair share of tornadoes since I am from the Midwest, but never in New England! Everyone I know is alright but the damage is pretty extensive in like Springfield, Westfield, and West Springfield. Crazy stuff… Guess what?? It is Thursday already!! Woohoo! I have to say the week has been going rather fast for me. Work has been keeping me really busy. Next week I…

Chicken Tacos with Cilantro Slaw and Avocado Cream

I started my weekend off right this past week…yup, that’s right…with cocktails! I know a lot of you saw my delicious cocktail picture on book of faces at precisely 6:31pm Friday night. I was lucky enough to take the afternoon off from work last Friday and take a nice bike ride. I am SO glad that I did that too because like you read in my post yesterday, it is supposed to rain for the next 6 days… 🙁 . I am very happy that I was able to get out and enjoy the last of the sunshine for a while. Anyways, to celebrate the gorgeously warm weather…what better cocktail…

    Garden Pasta Salad

Congrats Tino!! He just bought himself a brand new 2011 Hyundai Sonata, fully loaded SE 2.0T,  and traded in his Ford Explorer. His exploder as we called it! He is a hard core Ford guy so I have to say I was very shocked when he decided on the Sonata, but the car is really beautiful and certainly is going to get him better gas mileage than the exploder. Although, I know he will miss his big car…but I am SO proud of him for buying his first *new* car (you know how that goes, owning lots of cars in your lifetime but never a *new* car)! In spirit of…

    Ratatouille Pizza

Happy Monday all! I hope you all had a fabulous weekend. The weather here was so gorgeous, I think Spring may finally be upon us. It was sunny and 70 both days of the weekend and it was truly glorious. Now in true Spring tradition it is supposed to rain the *entire* week :-(. Ah well, at least the weekend was nice and now that I have to be stuck inside for work it will be rainy. Don’t forget to stop by Becky’ s Bake Sale today and check out all the goodies that she has. Everything looks SOOOO yummy!!! Head on over and check it out and make a…

Chef Dennis has over 35 years of culinary experience and is currently the Chef/Director of Dining Services at Mount Saint Joseph Academy in Flourtown, Pa.  He is such an inspiration to me! Pesto Gnocchi

Good rainy morning to you all! I have a big presentation this morning to the big man on campus here at work and all his staff so this is going to be a short and sweet intro. Need to prepare! I am not one of those people that really gets nervous when I present to a crowd, I think that may be because I am a dancer and have spent a lot of time on stage. Either way even though I don’t get nervous I do like to be prepared for the pack of wolves I am about to get up in front of, haha. This recipe that I am…

    Garlic Fries

I have a love affair with garlic… We go together like peas and carrots, chocolate and peanut butter, lamb and tunafish! <—movie reference, I don’t really like lamb and tunafish together. Just want to make that clear haha. Seriously though, I have a really hard time not cooking with garlic. I am one of those people who can put a whole head of garlic into the oven, roast it, and then spread it on bread….YUMMMMMMIE! Or should I say NomNoms ;-). Or how about garlic and olive oil as a dipping sauce? ::kisses fingers:: MUAH! OR how about a fresh tomato salad with cucumber and garlic…. ::dreams of summer tomatoes::…

    Sesame Noodles with Chicken

It’s Friday!! What a week this has been! I think that being gone to California really put a dent in my workload at work. I just cannot seem to get ahead of the game. Needless to say I am pretty happy about it being Friday not only because it means I don’t have to work tomorrow and I get to sleep in, BUT one my girlfriends at work went on a “HOT DATE” last night and I can’t wait to hear about it!! 😉 Last night I wanted to try and make something a little different (and healthy) for myself. I am always looking to try new recipes but sometimes…

    Crustless Spinach & Feta Quiche

I think I may finally be catching up on some sleep. I lived up to my promise and made it to bed by 10pm, which I have to admit I was really happy about. I feel a little more refreshed today and not as sluggish. THAT is a good thing because I have presentation to give at work today…I hate giving presentations when I don’t feel up for it, so I am very glad that my body is starting to feel a bit more normal today. Whew! Also, I have figured out a way to comment on blogs again. Not sure why my WordPress ID isn’t working but I am…

    Hoisin Beef

Ahhh the warm California air is so glorious! So what am I doing blogging right?? Well, I had this post saved so that I could post it while I was away because I did promise you all another recipe from my Great Food for Great Friends post. Here is the last recipe from the night of cooking with my friends. The recipe is for Hoisin Beef skewers. I wanted to make something that was easy for my guests to eat AND enjoy. That is why I decided to skewer the beef. The original recipe was for beef tenderloin steaks but this was a little less formal and more keeping with…
