Veggie Junkie

::sigh:: I just love vegetables. I really do!

I get such a hard time from most people about loving vegetables so much, but I swear, cross my heart and hope to die, that I really, TRULY love vegetables! ๐Ÿ™‚ My dad tells me that I was a rabbit in another life because I eat so many vegetables…

maybe that is why I feel so comfortable around my bunny, hehe

I wasn’t always a vegetable fan…well, OK…maybe I was just a little bit, BUT I didn’t like a wide variety of vegetables like I do now. Here is a story for you…

When I was little, I ate carrots like they were going out of style. I mean I ate them C-O-N-S-T-A-N-T-L-Y…not just at lunch or dinner time. I think almost every picture that my parents took from my childhood I have a carrot stick in one hand or the other, and sometimes both ;-). I was a very picky eater when I was younger…if it wasn’t Cheerios, peanut butter, or carrots; I wanted nothing to do with it. That may be a slight exaggeration, but not by much. I was allergic to artificial colors and flavors when I was younger, so it really limited what I could eat in general.

Anyways, back to the story…

One day, my mother notices that my finger tips are starting to change a strange color. The next day my lips. The next day the whites of my eyes. Obviously being a good mother, she does the right thing and takes me to the doctor.

Mom – “What is wrong with my child Doctor?!”

Doctor – ::scratches head:: “Hmmm, let’s take a look”

Doctor – “Has she eaten anything strange lately?” ::as toddler Raven chomps on carrots sitting on the examination table::

Mom – “Well, I don’t think she has…she pretty much sticks to carrots, Cheerios, and peanut butter”

Doctor – ::doctor smiles:: “The good news is, your child is completely fine. The bad news is, if you can consider it bad news, because she eats so many carrots she has an excessive amount ofย  beta-carotene in her system. Which is why she is turning a shade of orange. Look at the bright side, at least she will have good eye sight…but try to get her to eat something besides carrots.”

The reason I am telling you this story is because last night I had a strictly vegetable dinner and it was fabulous! As always I got the “you don’t want any kind of meat with that??” Nope, I am all set!

Fresh green beans and tomatoes was my dinner and there is nothing wrong with that…

Slightly cooked green beans (less than 2 mins cook time), sliced tomatoes, olive oil, pepper, and parmesan.

The trick, at least for me, was to find the vegetables that I love…which there are few I don’t…and just experiment with them. There are TONS of vegetable recipes out there to try. Sometimes you come out with something horrific, but that is part of what cooking is right?
