Guacamole

I love avocados! When I say “love” I mean L-O-V-E!! I took a trip to Mexico about a year ago with some friends and my boyfriend…I am not joking you when I say I ate guacamole or something with avocado in it at every meal! I adore it…I am one of those people who can just slice an avocado and eat it on bread…YUM! Or should I say NomNoms 😉

Anyways, this weekend my boyfriend’s Mom invited us over to dinner. She was making beef burritos and I hate going to someone’s house without bringing something. So, I told her I would make some guacamole once I got there (and I brought her some of my homemade salsa too :-D).

Here is what you will need for my guacamole recipe….

Ingredients:

3 Avocados

1 clove of garlic

1 medium-sized tomato

1/2 a lemon

1 jalapeno (add more if you like extra spice)

1/2 teaspoon onion flake

salt and pepper to taste

slice avocado and squeeze lemon over top
add garlic, pepper, salt...and mix together
add jalapeno
add tomatoes and stir (kind of smash with a fork when you stir to combine ingredients)
then enjoy!

While I was making the guacamole, my boyfriend’s Mom was nice enough to make some drinks to go along with our meal! MARGARITAS!

Below is the final meal, which was really good! I hope you enjoyed my guacamole recipe. It is really simple and really fresh. I don’t like a lot of “bells and whistles” in my guacamole to hide the flavor of the avocado. Enjoy!

By the way, don't you just love her blue & white dishes?! I do!
