BBQ!

Can you believe that August is almost over?! I can’t!! This summer has absolutely FLOWN by me. I can’t believe that kids (in general, not my own haha) are going back to school and that in a few weeks the leaves will be changing on the trees! I love Fall though! I love, love, love it! I love the leaves and the cooler weather but not cold weather. We get some pretty cold winters here in the Northeast. I really think that I love Fall so much because of the feeling I get around that time of year. When I was younger, I was always getting ready to go back to school, and I was one of those kids who was always looking forward to going back because that meant that I got all new school supplies and new school clothes!! πŸ˜›

BUT, summer isn’t over yet…and it is always good to have one last summer bash! My parents have the most beautiful home and when they have parties, they go alllllllll out! I came over and helped my Mom cook on Saturday for the BBQ she wanted to have for my BF’s family (which was actually a surprise! I didn’t expect her to do that). We spent all day chatting and cooking and telling my Dad what to do, haha πŸ˜‰

I took a TON of pictures so please be warned with this post that if you start to read this there will be about 40 photos to follow, haha. I hope you all enjoy them! Where the party took place

Here are some pictures from the set up of the party, my Mom and I yapped for hours getting ready for this thing.

For the meat...rub from Kansas City (real shocker)
Beef tenderloin cut into filets and wrapped with bacon

Veggies and dip
Bruschetta
Tomato, basil, mozzarella, and garlic...yum

Football Bread Ingredients:

French bread, bacon, red and green bell peppers, green onions, cream cheese, cheddar cheese.

Directions: Cut french bread into 1/2″ sections, mix together cream cheese, peppers, onions and spread onto bread. Sprinkle cheddar cheese on top with bacon. Cook at 375Β° for 10-15 minutes until cheese is bubbly.

Bread on Grill

Let me just describe what we have here. Grilled Beef tenderloin wrapped in bacon, Grilled Salmon with the Squeal rub I posted a few weeks ago, Grilled chicken sausages (if you have never tried or heard of these, pleeeeease try them!), Green beans with red peppers and bacon, Cucumber and Sour cream salad (see early post for recipe), Potato – corn – tomato – and mozzarella salad, Tomato salad (Liebro Staple), Broccoli Salad (another Liebro Staple), Fruit Salad, and Strawberry and spinach Salad.

Bread on Grill Ingredients:

Round sourdough loaf, garlic, butter, dried basil, dried parsley, pepper.

Directions: Cut bread into sections on top (see picture). Slice but not all the way through the bread to make a grid pattern. Wrap bread with foil. In a glass liquid measuring cup, place butter and garlic. Melt butter in microwave. Put basil and parsley into measuring cup with butter and mix well. Unwrap bread to, with fingers, lightly spread grid sections on top of bread and pour butter mixture into the cracks. Do this all over bread to make sure all the bread has butter on it. Wrap bread again in foil. Place on grill and let cook for 30 mins.

This bread is amazing! My family cannot have a BBQ without this bread!

Strawberry Salad Ingredients:

Spinach, strawberries, feta cheese, pecans, butter. Raspberry Vinaigrette Dressing.

Directions: Place pecans onto cookie sheet pan lined with foil and pour a few tablespoons of melted butter on top. Rub to make sure all walnuts are coated. Sprinkle sugar on top of walnuts. Place into oven at 395Β° and bake until crispy. Tossing walnuts regularly while in oven.

Place spinach and strawberries into large bowl and toss together. Add feta and pecans. Drizzle (lightly!) the dressing and serve.

This salad is ALWAYS a hit, definitely try it!

Green bean with Red Peppers Ingredients:

Pre-cooked Green beans (still crisp), red peppers, pre-cooked bacon, butter, salt and pepper to taste. (and by pre-cooked I mean, cooked earlier in the day. None of that pre-cooked stuff from the store)

Directions: Place butter into medium to high heat pan. Place red peppers and bacon into pan and let butter coat for 2-3 mins. Place green beans into pan and toss together. Let all ingredients sit in pan for 3-4 minutes. Serve hot.

I didn’t actually have any of the meat but I heard from all the guests that it all was very good! I was too interested in eating all the yummy sides and salads that we had.

Now on to the desserts!!

My Mother's famous cheesecake (she uses 3lbs of cream cheese in this)
TOP SECRET! Runny Frosting.

This is….the best….chocolate sauce…you will ever have…in your entire life. Now, I cannot share the recipe for this because it is a family secret. It is seriously the most heavenly chocolate sauce in this entire world. It is so glorious, I cannot even try to put it into words how good this is. I can however show you a picture of the first time having runny frosting “stance”. Which is demonstrated so perfectly by my bf’s brother. There is one arm to guard your bowl and the other is used to shovel the phenomenal cake into your mouth haha πŸ™‚

It was a great night! We had so much fun and we were so happy to have his family over for good food and a good time. Thank you to all the Liebro’s for coming to the BBQ. We were so happy to have you! And thanks Mom and Dad, again, for being such great people who put on such absolutely gorgeous parties…I love you all!

    Now THAT is a cheesecake!!! As far as the runny frosting I can respect a family secret but can you give me a hint?? It sounds like you all had such an amazing time. I love get togethers and cook-outs with my family…we tell my dad what to do too hahaha.

      haha, I am sorry honey, that recipe is absolutely top secret. It’s one of those “I’d tell you, but then I’d have to kill you” type things. haha πŸ˜‰ I CAN tell you that it is served warm and there is a WHOLE stick of butter in it, hehe

      Yes it is definitely time to break out the beer food and if you are looking for something fuss free, the football bread is awesome for games! It can be served hot, room temp, or cold. And here is the best part…it freezes awesome! So if you want to make extra one time and just pop it in the freezer, the next time the big game is on all you have to do is preheat the oven πŸ™‚
