Jalapeno Poppers

Football season is coming up again and that means that there is going to be lots of Sundays (and Saturdays if you are a college football fan) full of football, beer, good people, and FOOD! This is a recipe that is always one that my family has during football season. Very tasty, not as good for you as most of my recipes are…but sometimes it is OK to indulge. 😉

Ingredients for Poppers:

7-8 Jalapenos

10-12oz low-fat cream cheese

1 cup cheddar cheese

Chives

1 cup flour

2 eggs

1/4 cup of skim milk

2-3 cups vegetable oil

Choose larger Jalapenos of the bunch you have
Place on cookie sheet and place in 350 deg oven
Cook the Jalapenos until the skins start to separate

This is the part that I was not able to photograph because I had gloves on, haha. After you take the jalapenos out of the oven let me cool off and rest. Then make sure you get plastic gloves on for this portion of the recipe because I promise your hands will be screaming later on if you don’t. I learned that the hard way!

Peel skin from the opposite end of the stem. Do not run under water to do this or you will lose the flavor of the skins. After skin is off of the jalapeno, slice down the middle of the jalapeno and remove seeds and veins (this is where most of the heat is, if you like spicier things leave some of the veins and seeds in).

Stir the ingredients together and then use your fingers to fill the jalapenos that have been sliced. This is extremely messy and don’t worry about the way they look in this stage because they will not be pretty.

Place in refrigerator for about 20 minutes to let the cream cheese filling set up.

Fill pot with your oil and heat up the oil on medium heat. Make sure you don’t heat the oil too quickly because then the poppers will not cook all the way through and they will get too brown on the outside. Dip poppers in egg wash (eggs and skim milk) before placing them in the oil. Place poppers in the oil and cook for about 1 minute. Place on paper towel to drain excess oil.

Serve hot with sour cream
