Mint Chocolate Chip Cookies

Yes, not mint chocolate chip ice cream, but mint chocolate chip COOKIES! I know what you are thinking…”Rave, that sounds pretty weird. Not sure about that” …trust me, if you like mint and chocolate you will like these cookies.

I was having one of those weekends when I really wanted to try a new cookie out and so I thought about all the things that I really love. Peanut butter…but I make those cookies all the time so I scratched that idea. Chocolate, OK that’s always a keeper :-). Caramel…yes, adore…buuuuut maybe not this time. EUREKA! Mint! Mint and chocolate is one of those combinations that I just cannot get enough of. Those little Andies Candies that some restaurants give out? LOVE!

So I decided to try it out and I must say, they were really fantastic!

Ingredients for Mint Chocolate Chip Cookies:

  • 2 cups all purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 stick plus 2 tablespoons unsalted butter (room temp)
  • 1 cup sugar
  • 1 large egg
  • 1 large egg yolk
  • 1/2 teaspoon pure vanilla extract
  • 1/4-1/2 teaspoon mint extract
  • 6-8 drops green food color
  • 1 package of Nestle’s dark chocolate and mint chips

Preheat your oven to 350º

Cream butter for 1 minute and add your sugar. Beat that mixture until it is light and pale. Add egg and egg yolk and beat for another few minutes and then add vanilla and mint extract.
Reduce the mixture to low speed and steadily add in the flour mixture (baking powder, salt, flour). Add in drops of food coloring until you reach the desired green color.

I decided to make it on the lighter green side because to me, mint is more on the light green spectrum than a St. Patty’s day green. Feel free to make these as green as you want or NOT green at all if you prefer.

Fun Fact: Raven’s favorite color is green.

Add in your chocolate and mint chips.

Take your dough and grab about a teaspoon size amount of cookie batter and roll the cookies into balls on your cookie sheets.


Place your cookies in the oven and let them cook about 10 minutes or until the bottom of the cookie starts to brown. Take out of the oven and let cool on the cookie sheet for about 3 minutes. Place on wire rack and let cool completely.

And then we ALL know what to do after that (or while they are still warm hehe)!

These cookies were actually really good and should be eaten by anyone who is a mint and chocolate lover, they are really good and really simple actually. I always like to try new things and these were definitely a thumbs up experience!

Directions:
  1. Cream butter for 1 minute and add your sugar. Beat that mixture until it is light and pale.
  2. Add egg and egg yolk and beat for another few minutes and then add vanilla.
  3. Reduce the mixture to low speed and steadily add in the flour mixture (baking powder, salt, flour). Stop the mixer before all the flour is blended into the dough and finish the mixing with a rubber spatula.
