Garlic Mashed Red Potatoes

Happy Mardi Gras everyone! I have to say I don’t have any exciting Mardi Gras recipes to share. I have been seeing all sorts of awesome King Cake recipes, that just look delicious! I do however have my beads on today at work! Welcome to my small little cube that I work in everyday…hehe, don’t laugh…you gotta have fun a little even when you are at work! πŸ™‚ Or at least I try to, otherwise I would absolutely go crazy! I am a little bit of a dork and I like to say and do silly things. While I have to try and control that a little in the office I don’t completely hide it. πŸ˜‰

Speaking of gorgeous King cake, I am giving up all sweets for Lent. Yes, I am a good Catholic girl. I normally give up sweets to Lent because it is hard for me. I know what you are all thinking…”Raven EVERYONE and their mother gives up sweets/chocolate/candy etc…”. Here is my rational: I LOVE to bake and I LOVE to then eat what I bake, so to give that up for 40 days is always a challenge for me. I normally try to replace the baking with muffins, breads, etc. That way I still get the feeling that I am baking and then I get to enjoy the baked goods after πŸ˜€ . Another thing that I tend to enjoy is that, you are not supposed to have meat on Fridays. That always makes for a lot of peanut butter and jelly sandwiches different and interesting recipes.Β  Not that I eat a large amount of meat (I am sure most of you have seen that I am a veggie freak! hehe) but, trying new things is always fun!

This past weekend I made a super good meal which consisted of a few different things and I wanted to share with you just one piece of it. Don’t worry! I will be sharing the entire meal eventually, but this piece is a side dish that REALLY came out well and I love to share good side dishes that can be used with different things! It was garlic mashed red potatoes (“PO-TA-TOE! Boil’em, mash’em put’em in a stew!”…who can name that movie reference!?). The recipe comes from Cooking Light, which I simply adore! Cooking Light really does come up with super tasty things for you that don’t add to the waistline. Love that! The potatoes were so creamy and yummy but, you wanna know the best part? It is low calorie and low in fat! Can’t beat that right?! A serving size for this dish is about 1/2 cup, and has only 120 calories and 4g of fat! Now that I can get behind and maaaayyybe even have a second helping! hehe πŸ˜‰

Ingredients for Mashed Red Potatoes with Chive and Garlic:

  • 2 lbs small red potatoes
  • 6 gloves of garlic
  • 1/2 cup reduced fat sour cream
  • 1/3 cup skim or 1% milk
  • 2 1/2 tablespoons butter
  • 1 teaspoon kosher salt
  • 1/4 teaspoon freshly ground pepper
  • 1/4 cup chopped fresh chives (cut some extra for some garnish)

Place washed potatoes (I left the skin on, but you can take it off if you like) and garlic in a large dutch oven; cover with water. Bring this to a boil. Reduce the heat and then let simmer for about 30 minutes or until tender. Drain.

Return the potatoes to the dutch oven and place over medium heat. Add the sour cream, milk, butter, and salt, pepper. Mash the potatoes mixture to desired consistency with a potato masher.

Stir in the chives and then serve!

I really liked making the potatoes in a dutch oven, I am definitely going to do that again! They came out absolutely perfect and I only had this one dish that was dirty instead of taking the potatoes off the stove and adding all the ingredients in a separate bowl, and we all know what my motto is when it comes to cooking! A good cook cleans as she goes! πŸ˜€
