Black Bean Quesadillas

What a day! I am so stressed out at work…I am really hoping that because I am so busy today that Friday will come sooner than I think it will! Seems forever away right now. Keeeep positive right?? Haha

I have been doing really well on my “no sweets” for Lent goal. So far I haven’t caved at all, which I am really proud of! haha I really love desserts so this has been really hard for me. I think I miss making them more than I actually miss eating them. Is that weird? Anyways, I have been doing the whole no eating meat on Fridays which really doesn’t bother me one bit. I honestly don’t eat that much meat anyways, but it is giving me a chance to have some really yummy veggie meals, including my black bean quesdillas in this post 🙂

Ingredients for Black Bean Quesadillas:

  • Soft tortilla shells
  • Black beans (from the can, drained)
  • Green bell pepper
  • Jalapeno
  • Tomato
  • Cheddar Cheese
  • Pepper Jack Cheese
  • Cooking Spray

Spray outside of tortilla shells with cooking spray and then flip over so that the sprayed sides are together.

Spray a large skillet with cooking spray and heat to medium-high heat. Put black beans onto tortilla and then place green peppers, tomatoes, and jalapenos on top of that. Sprinkle with cheeses (mix together the cheddar and jack).

Place one of the filled tortillas onto the skillet and place tortilla with just the cooking spray on top, with sprayed side up. Cook the quesadilla until the bottom is golden brown. Flip and cook the other side until melted and crisp.

Of course I served mine up with some homemade guacamole, my salsa, the homemade tortilla chips, and some sour cream. This is a great meal to have during these Lenten days because there is obviously no meat in the meal. Not to mention I could just eat quesadillas all the time haha ;-).
