Splendid Spiced Strawberry Muffins

The show for the dancing company I have been dancing with is coming up this Sunday so I might be slightly MIA here and there. Try and excuse my absence and general lack of focus this week. I promise I’ll be back to my Ravie Nom Noms self soon.

We all know I have been on a muffin kick lately because of my giving up “desserts/sweets” for Lent. The following muffin was something I had been craving for some reason. Strawberries make me think of summer and since it is just now acting like it is spring outside, I wanted to make something that reminded me that summer is on its way too.

Ingredients for Muffins:

  • 1 1/2 cup all-purpose flour
  • 1/2 cup white sugar
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 (6oz) container fat-free strawberry yogurt
  • 1/4 cup butter, melted
  • 3 tablespoons non-fat skim milk
  • 1 large egg, lightly beaten
  • Cooking Spray
  • 1/4 cup strawberry jam/jelly
  • 1 tablespoon white sugar
  • 1/2 teaspoon ground cinnamon

Preheat over to 375º.

Combine flour, sugar, baking powder,  salt, and cinnamon in a large mixing bowl and whisk together. Make a well in the center of the flour and add the yogurt, butter, milk, and egg. Stir the mixture together just until the ingredients become moist. I was pleasantly surprised at how fluffy this batter was.

Place foil cup liners into muffin cup pan and spray with cooking spray. Spoon about a tablespoon of the batter into the cups and then put jelly/jam on top of the batter. Top evenly with the remaining batter. Combine the remaining sugar and cinnamon together and dust the top of the muffins. You will want to use these foil cup liners because of the jam/jelly in the muffin.

Bake the muffins for about 15 minutes or until a wooden toothpick comes out clean. Cool in the pan on a wire rack for about 15 minutes. Remove from pan and enjoy.
