Herb-Crusted Chicken with Red Quinoa

Happy Good Friday everyone!! I have been kind of MIA this week…I apologize!! After the show this weekend, which went SO well, I have been trying to catch up. Work has been SO busy and the softball and kickball (yes I play kickball in an adult league, it is SO much fun!!) leagues are starting up. BUSY BUSY!

I am so excited about this weekend…want to know why?!

I am going to be baking all day Saturday, you better believe it! I am so excited. I have seen so many great recipes for cake pops lately, so I am going to make some of those for Easter. My guy and I always spend Saturday with my parents and go to the vigil Mass and have a big Easter dinner and then the day of Easter we have a big breakfast with my folks and then head to his Family’s get together. I thought cake pops would be perfect to bring to his family. They aren’t really dessert eaters so I figured if I bring something that is small and easy to eat…they will be all over it haha πŸ˜‰

Last night I made this herb-crusted chicken. It is super healthy (397 calories), super fast (20 mins), and wicked good! Try it out!

Ingredients for Herb Crusted Chicken:

  • 2 Chicken breasts
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 clove garlic
  • 3 tablespoons fine herbs (any dried herbs you like)
  • Salt and Pepper to taste

Take your chicken and lightly salt and pepper each side. Take your herbs and sprinkle them on the raw chicken pressing down on them so that they adhere to the breast. Do this to both sides of the chicken.

Place your butter into a skillet over medium heat. Chop your garlic and place into skillet. Cook for about 1 minute. Pour your oil into the hot pan roll pan around to coat the bottom with the oil and butter mixture.

Place chicken into the pan and cook for about 5 minutes on one side or until brown and then flip and cook for about 7 minutes on the other or until done.

I cook my quinoa very simply. One thing I do do before I cook it is soak it in water for about 10 minutes before I place into the pan. I boil 1 clove of garlic and chicken broth (free range/low sodium/fat free) and then place the rinsed quinoa into the pan and cook until all the liquid is gone. Takes anywhere from 15-25 minutes.
