Swag Bars

Don’t holiday weekends always seem to fly by quicker than regular weekends? I swear every time there is a holiday week I feel like the time just FLIES by. I had a fabulous holiday weekend! I hung out with friends and had family friends from Kansas City come to visit. It was a weekend full of food, drinks, love, and sun! Couldn’t have asked for a better weekend if I had tried.

I will make sure to post some pictures from the visit from the Ellenburger’s! It was SO great to see you guys! We miss you like crazy! 🙂

Now I call these Swag Bars because, well look at them! They have swagger! If I had to imagine these bars talking, which would be uber weird but just work with me here, they would say, “Yea you know it, I am made with peanut butter AND chocolate! ::lifts peanut arms:: what’s up?!”. Ok, I am weird, I know 😉

These bars are super easy and are NO bake. Gotta love that on hot days. It was pretty warm this weekend, we just skipped right on by spring and went right into summer. I am NOT complaining, but when you cook in the kitchen when it is really warm out…that isn’t too much fun. So, I decided to make these little beauties and keep the kitchen cool. Enjoy!

Ingredients for Bars:

  • 1 3/4 cup creamy peanut butter
  • 3/4 cup sugar
  • 3/4 cup light colored corn syrup
  • 1 1/2 cups chopped lightly salted, dry roasted peanuts
  • 3 1/2 cups whole-grain flaked cereal (like Total), finely crushed
  • Cooking Spray
  • 1/3 cup chopped dark chocolate

Combine peanut butter, sugar, and corn syrup in a saucepan over medium-high heat. Cook 4 minutes or until mixture begins to boil, stirring constantly. Remove from heat; stir in peanuts and cereal. Spread evenly over a 13X9 pan that has been coated with cooking spray.

          

Place chopped dark chocolate in a small microwave safe bowl.

Microwave on high for 1 minute or until the chocolate melts. stirring every 20 seconds. Be careful not to overheat, you don’t want to burn the chocolate. Drizzle over peanut butter mixture. Score the bars while warm for cutting at a later time.

I promise that these are so easy and really delicious. They aren’t super horrible for you. One of these bars clocks in around 100 calories. Not to shabby. The hard part will be not eating about 4 of them 😉
