Apple Bread

Ahhhhh….just what I needed. A weekend. This weekend was so relaxing AND I was able to find a dress for the wedding I am attending this week. I found it at Macy’s and I almost NEVER shop there. I started looking back over the past couple months and I realized that I really haven’t bought myself anything for a while, so what the hell, why not buy myself a new dress for the wedding right?

I have never been one of those girls that spends countless hours shopping for clothes (however, when it comes to shoes? Forget about it. I could shop for 12 days- haha). Sometimes it is good to reward yourself though. A girl needs to splurge every now and again you know?

Speaking of splurges…this bread I am sharing with you today is going to make you feel like you are splurging. It is sweet and satisfying BUT has some hidden ingredients in it to make it healthier for you than you think it is. Don’t you just love that?

Ingredients for Apple Bread:ย 

  • 1 1/2 cup all purpose flour
  • 1 1/2 cup wheat flour
  • 2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup applesauce
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 eggs, beaten
  • 2 cups apples, peeled, cored, and coarsely chopped

Preheat oven 350ยบ

In a bowl combine the flours, cinnamon, baking soda, baking powder, and salt. Set that mixture to the side while you mix the wet ingredients.

In a large mixing bowl, put the applesauce, sugar, eggs, vanilla and apples. Stir this wet mixture into the flour mixture. You can add nuts to this mix too, if you like I didn’t because mister Lion doesn’t like nuts ๐Ÿ˜‰

Divide your bread mixture between 2 – 8″ x4″ bread pans that have been heavily coated with cooking spray to prevent the loaves from sticking.

Bake for 40-45 minutes or until the bread tests done with a toothpick and springs back to the touch. Cool for about 10 minutes on a wire rack before removing from your pan.

I also made some cinnamon butter to go with the bread because I thought it would be a nice touch. SUPER easy. Just take about 2-3 tablespoons of butter, 2 teaspoons of honey, 1 1/2 teaspoons cinnamon and mix together and you have a sweet treat to go on top of your bread.

How pretty is this bread? It just ended up being the prettiest brown color when it baked. Delicious looking if you ask me. Not to mention it WAS delicious! It was moist and sweet put still a bit savory. Perfect bread to have at a meal or for a snack afterwards ;-).
