Dinner for Two for Steph’s Virtual Bridal Shower

Have you met Steph before from over at Steph’s Bite by Bite?? If you have not, get your fanny over there and check her out. She is getting married October 29th so Kita over at Pass the Sushi decided that it would be great if we threw her on online Bridal Shower. What a fantastic idea huh? I thought it was such a good idea and I couldn’t wait to be a part of it. Click the link at the end of this post to see all the other great recipes for Steph.

Steph is by far one of the most genuine bloggers that I have come across. She is cute, funny, an avid runner (which I am, still to this day, so impressed with), and so sweet. You can’t help but just love her when you read her posts. Not to mention she makes some AH-mazing food! I am especially in love with her baked goods. Every time she bakes I just want to reach into the screen and just take a huge chomp out of her goodies. So this is a shout out to our girl Steph, congrats on being awesome and getting married girlie!

For this Virtual Bridal Shower we were each asked to share a “Date Night” meal. I always love making something for my Lion so I knew that I would be able to share something that would be good for this. Although, my Lion seems to enjoy anything I make for him. He says it’s because I use a secret ingredient…can anyone guess what it is? 😉

Here is my menu for “Date Night”

  1. Bistro Roasted Chicken 
  2. Pommes Frites with Chives (mhm fancy words for french fries)
  3. Chocolate Covered Bananas with Raspberries

I have to say it came out quite nicely. I adapted the chicken and frites recipe from Cooking Light (I know you are shocked aren’t you?).

Ingredients for Chicken:

  • 2 chicken leg quarters (about 1 1/2 pounds)
  • 1 tablespoon 1 teaspoon dried basil
  • 1 tablespoon 1 teaspoon dried thyme
  • 1 tablespoon 1 teaspoon dried rosemary
  • 2 teaspoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 whole garlic heads

Ingredients for Pommes Frites:

  • 3/4 pound Yukon gold or red potatoes, cut into 3 x 1/4-inch sticks
  • 2 teaspoons olive oil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried basil
  • 1 clove fresh garlic
  • Cooking spray
  • 1 tablespoon chopped fresh chives
For Chicken:

Preheat oven to 375°

Rinse chicken with cold water and pat dry. Trim excess fat. Loosen skin from thigh and leg by inserting fingers, gently pushing between skin and meat. Combine basil and next 5 ingredients (basil through pepper). Rub herb mixture under loosened skin. Place chicken on a broiler pan. Insert meat thermometer into meaty part of thigh, making sure not to touch bone.

Remove white papery skin from garlic heads (do not peel or separate the cloves). Wrap head  in foil and place on broiler pan with chicken. Bake at 375° for 45 minutes. Increase oven temperature to 450° (do not remove chicken from oven). Bake 30 minutes (throw your Frites in with the chicken for the last 30 minutes) or until thermometer registers 180°. Cover chicken loosely with foil; let stand 10 minutes.

For Frites:

Combine potatoes, olive oil, thyme, basil, and garlic in a large zip-top plastic bag. Seal and shake to coat. Arrange potatoes in a single layer on a baking sheet coated with cooking spray. Bake at 450° for 30 minutes, turning once. Toss with chives.

I gotta tell ya something…the chicken was really good. So moist and really flavorful…I personally am not a skin eater, but feel free to have at it if you like it. Lion and I enjoyed the chicken thoroughly without it.

We have to finish off the meal correctly too now don’t we? I know the easiest way into my Lion’s heart and that is through his tummy…but not with just anything…with something sweet. He loves all things sweet that I make for him so for a “Date Night” I knew I had to make him something to get at his sweet tooth.

Chocolate Covered Banana Ingredients:

  • Bananas
  • Butter
  • Baker’s Chocolate

Easy peasy here peeps. All you do is melt your chocolate and butter together (I used 3 bananas so I used 2 baker’s bars and 1 tablespoon butter). Slowly melt too. I did it in the microwave, 30 seconds at a time stirring in between each interval.

Cut your banana into sections about 1″ long. Dip the banana and let it the excess come off. I normally run my finger along the bottom so there isn’t too much extra when you set it down. Place the banana onto a piece of wax paper or foil and stick a toothpick into the center over of the top so you can grab it later.

Place in the fridge for about an hour until set and then enjoy!
