Mini Chocolate & Peanut Butter Cookies

Yay Patrick! Look at you go, your Whole Wheat Waffles made the Top 9! Thanks everyone for the Top 9, I know Patrick is really excited about it. You should have seen his face when I showed him the notification on my phone this morning at 6:30am haha. Too cute!

I am so excited that Turkey day is tomorrow. I think I am more excited about not having to go to work than anything else haha. Sometimes you just need a break you know? It will be nice to just spend some time with the family cooking and telling stories and then napping once we stuff ourselves with turkey hehe πŸ˜€

This recipe I am sharing with you today is for some cute little cookies that are so easy to make. I brought them to a tailgate this past weekend and they were perfect. Because you know people love finger foods at tailgates.

Ingredients:

  • 4 tablespoons butter, softened
  • 4 teaspoons canola oil
  • 1 cup packed dark brown sugar
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 2 large egg whites
  • 1 1/2 cup all purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 cup chocolate chips
  • 1/2 cup peanut butter chips

Preheat oven 375ΒΊ

In a mixing bowl, cream together butter, sugar, and oil. Add vanilla, salt, and egg white. Mix very thoroughly to combine.

In a small bowl to the side, mix together flour and baking soda. Add this to the batter and mix well. Divide the batter in half and add in chocolate chips to one half and peanut butter chips to the other.

Drop 56 teaspoons of tough onto a nonstick baking sheet. You don’t have to leave much space in between the cookies. bake for about 9 minutes or until the cookies turn a darker shade of brown (the dough is a little darker than regular chocolate chip cookie dough). Cool on a wire rack.

These were the perfect little cookies. Yow know when you don’t want to have something huge and just want a little nibble of sweet? These are perfect for that!

    Oh don’t you worry about that! I’ll be eating plenty, but hopefully I don’t totally obliterate my new eating habits that I have worked so hard to form. πŸ™

    Cookies are my favorite. In fact, if I could get a bouquet of cookies instead of flowers I’d be all over it. I’ll leave this post up when my other half uses the computer later and see if he gets the hint. Sometimes he’s pretty intuitive.

    Raven, you could bring sloppy joes and soup to a tailgate and people would go nuts over it no matter how difficult to eat while watching the game. You have some pretty impressive recipes and we love everything we have tried. I love waking up in the mornings and seeing you in the Top 9! I hope you have an amazing Thanksgiving!
