Gizzy is home!!!

Thank you all so much for your thoughts and prayers and kind words. I know they helped him. He was in the bunny hospital for 3 days. He is home now and has some meds he has to take and he has to take it easy, but he is home.

Thank Goodness!

You have no idea the amount of stress I was going through while he was at the vet. That constant unknown is horrible. Man o man. I am hoping for nothing but a healthy bunny for the rest of his healthy bunny life. I think it shaved a few years off my own life to tell you the truth haha.

But he is home now…and he says thanks everyone!

Btdubs, Happy Valentine’s Day!!

I made some cookies for Valentine’s day. Now, I am not really a Valentine’s day kinda girl. I mean it is sweet, but I just have never been a big fan of the holiday.

I ♥ making sweet things for Valentine’s though. I am sure you all can get behind me on this. There is nothing better than making something for your honey on Valentine’s.

So I made some cookies for my honey. Lots and lots of heart cookies 🙂

Recipe from Cooking Light’s Way to Bake.

Ingredients for Sugar Cookies:

  • 1 cup all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt
  • 4 tablespoons butter, softened
  • 2/3 cup sugar
  • 1 teaspoon vanilla extract
  • 1 large egg white
  • Cooking spray

Combine the first 3 ingredients in a bowl, and set aside. Beat butter at medium speed of a mixer until light and fluffy.

Gradually add sugar, beating at medium speed of a mixer until well-blended. Add vanilla and egg white, and beat well. Add flour mixture, and stir until well-blended.

Turn dough out onto wax paper and then wrap with plastic and put it in the fridge for about 2 hours or more.

When you are ready to bake your cookies, Preheat oven to 350°.

Cut your cookies into the shapes you like and then spray your baking sheet. Bake for 8 to 10 minutes. Remove from pan, and cool on wire racks.

Ingredients for Icing:

  • 4 cups powdered sugar
  • 2 tablespoons meringue powder
  • 6 tablespoons water
  • 1/2 teaspoon pure vanilla extract
  • Food coloring of choice

Add the sugar and meringue powder together and mix until combined in mixture. I would advise sifting the sugar at least 2 times before you begin.

Add water and vanilla and beat for 10 minutes or until the icing has lost its shine.

I piped the outline of the cookies first with a #3 tip and then let them set and then flooded the cookies by adding water into the icing so it becomes a little runny.
