Zesty Lemon Shrimp Pasta

Ok, so again this being grown up thing? When did this happen?

The getting up and going to work thing is overrated. Yea yea, money is nice…but man, if I could just get an extra hour of sleep everyday that would be saaawweeet!

To add the grownupness…Patrick and I stumbled across a house that we like and decided to go look at it.

One of those things that we drive by it every day to work and decided “what the heck” why not go and check it out just for fun?

Talk about your all time backfires.

Guess who the dumb girl is that really likes this house is even though it needs A TON of work??

I am lucky enough to be able to see the potential in a house even when it is in really bad shape. My whole family really has been fixing up houses ever since I can remember. My mom’s parents are that way and so are mine.

Wouldn’t it be great to move into a house and be able to really make it your own? Clean slate?

Gosh, it is amazing how quickly things can happen sometimes. I don’t want Patrick and I to be forced into a home just because we just happened to stumble across and liked. I say forced because the agent claims there is another offer, although we aren’t sure how reliable the relator is that is representing the seller. Puts pressure on us to act swiftly if we are truly interested.

I also don’t want to look at 30-40 houses just because other people said that is what they have done to find a house. I mean I don’t want us to feel pressured to do what others have done if we really like the house we saw.

Sounds strange doesn’t it? It is weird.

Normally I am the kind of person that takes her time and really wants to pursue all avenues before I jump into something, but for some reason this house is making me go against my grain. I hate it! haha

Patrick is of course so supportive of me and how I feel about just about everything. We went and talked to a loan officer to see our options for a house that needs serious reno and it seems we have an avenue we can go down, if we choose to.

Our next step is to get an estimate from a contractor on what he thinks the renovation repairs will be. We are working with our agent to get that set up.

I suppose if there truly is another offer and it goes through it really wasn’t meant to be, but I really like the idea of making a house our own.

I see how proud my parents are of the things they have done. I want Patrick and I to have that too. Silly perhaps.

Anyways, that is my rambling for the day…sometimes it just helps to get it out even if it seems silly ya know?

The recipe I am sharing with you would be good for the last day Friday of Lent we have coming up.

You know why? Because it shrimp! Nom Noms.

Adapted from this recipe.

Ingredients for Pasta:

  • 6 ounces whole wheat penne pasta (uncooked)
  • 2 tablespoons butter
  • 1 cup broccoli
  • 1/2 cup mini sweet red peppers
  • 1 tablespoon finely chopped garlic
  • 3 tablespoons lemon juice
  • 15-17 fresh medium raw shrimp, deveined
  • 1 teaspoon crushed red pepper
  • 1 teaspoon freshly grated lemon zest
  • 1/4 cup shaved Parmesan cheese
  • 1 teaspoon freshly chopped parsley
  • Salt and Pepper to taste

Cook pasta according to the directions and drain.

Melt butter in a medium sized skillet. Add the garlic, broccoli, and peppers. Cook over medium heat until broccoli is bright green and peppers are crisply tender.

Add shrimp, crushed red pepper, and lemon juice. Cook this stirring constantly until shrimp turn pink. About 2 minutes. Season with salt and pepper as needed.

Add the cooked pasta and lemon zest to the pan and toss lightly with the shrimp mixture.

Sprinkle each serving ( 1 1/2 cups) with Parmesan and parsley.

There you have it! A healthy meal for you that take no time at all. Easy right?

    Pasta and shrimp… winner dinner! ๐Ÿ™‚ Good luck with your house buying… it’s a great time to buy… but you have to know what you’re getting into and both agree. Now it’s a couple’s decision… somethings the art of compromise sucks. LOL! ๐Ÿ™‚

      Thank you Ramona! Unfortunately I don’t think we are going to get the one that I really liked, which I don’t think Patrick is all too upset about. Oh well I suppose right? And Compromising does suck ๐Ÿ˜‰

    My only advice is to follow your own – take your time and enjoy the process. If the fixer-upper is your style, then hire your own agent to help you find those types of houses. Believe me, there are plenty of them! And most homes DO fall into that category, even if they are not marketed as such. There’s always something to do. ๐Ÿ™‚ And on the shrimp – one of my FAVORITE quick dinners! yum!

    As far as I am concerned shrimp and lemon were made for each other. Which makes me pretty interested in this delicious recipe. I like that it is a light pasta dish without heavy sauce. Sometimes we want that instead of the other.
    Regarding your house hunt, I find that too much looking puts you in a rut where everything starts looking the same. So do not go on a mega hunt, just set aside a few hours a week and look on the net or in the paper and visit some that you like. Make notes on what you require and what you do not desire as well.       I agree! I think pastas with lighter sauces leave me feeling less SUPER full and uncomfortable. Plus lemon is just a great thing pretty much in all areas of cooking.

    My advice is to follow your gut. YOU know when you know. We bought the 5th house we looked at. We just knew when we walked in. The extra work is tough, but if you know what you are doing, and know you can afford the work, then it isn’t an issue. Remodeling can be fun and rewarding (if you know what you are doing)!     The best advice I could give you on finding a house, is that you will know it the moment you walk in the door. Sounds silly, but every house I’ve ever bought, I walked in and said, yes this is the one. You are a smart girl and I know you will find the one.     The pasta looks delicious and I always admire folks who can remodel houses. My sister and her husband are amazing at it and either build or remodel homes all the time (they move a LOT). I had a house built and haven’t changed a thing that didn’t need to be done. I’m SO not that person!     I am lucky to have met BF after he already purchased this house because I am not sure I could handle that kind of pressure. Congrats on the top 9 (late!) and I love the looks of this dish. I don’t get shrimp often but when I do I remember how much I love them.
