{Guest Post} Organic Cupcakes by Rhiannon

I was always seeing her posting cupcakes on her Facebook page and I was like hey, why not make something for the blog!

So enough about me, let’s get to Rhiannon!

Sweet Organix:  Taste Great…Less Harm!

There are many people in the world who don’t believe that organic food is healthier than the preserved/processed food that we encounter today.

People tend to think it lacks flavor. As believers and supporters of organic food, my husband and I try to educate others about the benefits without the lack of taste.

Although, I eat a lot of organic fruits and vegetables, I have a huge sweet tooth! It runs in my family.

My Bambina ate a lot of sweets. At times, she ate them for dinner. My philosophy is that sweets can taste good and still be healthy. Since organic eating is part of my lifestyle and sweets can be irresistible, I thought…why not combined the two?

I recently tried a cupcake from a local home baker. It was a tasty treat, but way too rich and filling. They weren’t made with organic or all-natural ingredients.

At that point, with inspiration from watching a lot of the cooking shows including “Cupcake Wars”, I decided that I was going to try to create delicious organic homemade cupcakes from scratch. I wanted to produce healthier cupcakes with organic ingredients that people would really enjoy.

Since then, I’ve created and shared several different flavored cupcakes with family and friends. I love seeing them enjoy my healthy sweets! I have recently made cupcakes for a baby shower, a school science fair, and a birthday celebration.

Here is a recipe that was one of my biggest hits!

PISTACHIO PARADISE CUPCAKES

(Use Organic Ingredients)

Pre-heat oven to 350º

For Batter:
  • 1 1/4 cups oat flour
  • 2/3 cup sugar
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 1/2 sticks butter (room temperature)
  • 3/4  cup ground pistachios (ground first and then measured)
  • 1 cup milk

Add to your mixing bowl 1 1/4 cups Oat Flour, 2/3 cup of sugar, 1/4 teaspoon salt, 1 teaspoon baking soda, 1 teaspoon vanilla extract, 1 large egg, and 1 ½ sticks of butter. Pour in 3/4 cup ground pistachios.  Blend together on low speed for 2 minutes.

Add 1 cup of milk gradually and mix on medium speed for 2-3 minutes.

Pour into cupcake pan and cook for 15-20 minutes or until toothpick comes out clean. Remove from oven and place cupcakes on a cooling rack for 15 minutes.

After cooling for 15 minutes, cut the center of the cupcakes in a square shape and pull out the filling. Let cupcakes cool for another 10 minutes and then add filling (make sure the center of cupcake is cool before adding filling).

 Simple Buttercream filling:
  • 1 cup powdered sugar
  • 3/4 stick butter (room temperature)
  • 1 teaspooon vanilla
  • 2 teaspoon milk
  • 1/4 cup finely chopped pistachios

Combine 1 cup of powdered sugar, ¾ stick of butter, 1tsp vanilla, 2 tsp milk, and 1/4 cup of finely chopped pistachios. Mix well on medium speed. Spoon into cupcake center and cover with removed cupcake filling. Whip together on medium speed until smooth.

Frosting:
  • 8 ounces whipped cream cheese (room temperature)
  • 2 cups powdered sugar
  • 1 teaspoon almond extract
  • 1 teaspoon milk

Combine 8oz whipped cream cheese, 2 cups of powdered sugar, 1 tsp almond extract, 1 tsp milk. Whip together on medium speed until smooth.

Sprinkle frosted cupcakes with finely chopped pistachios and 2 whole pistachios for decoration in the middle of the cakes.

Makes: 12 standard size cupcakes or 6 jumbo sized cupcakes
