I mean…

Well my my, what a year this has been…

Between wildfires, Covid and racism… 2020 has been a trip hasn’t it?

I don’t know about you, but I am kind of ready for it to be over, but while I am still in it… I thought, why not pick the blog back up? Share some things I am loving right now and maybe some things that I am not.

Not sure why I didn’t think about this until now, perhaps it is because no one really knows what the hell was/is happening in the world and are just now making some adjustments as we ease into this new “normal”. What even is normal?

Teddy Freddy

Currently like the rest of the world, I am working from home. I have actually found that I love the autonomy of working from home. Being able to multi-task while working is like a overachiever’s dream come true. I will say my favorite part about being at home is that I get to spend all my days with my most treasured partner, Mr. Teddy.

Those of you who know me well and are reading this know that my dog is probably the most important thing to me on the planet. Being with him every single day has made my heart SO full. With my job having a lot of unknowns right now, I am taking comfort in knowing that I get to spend my days with by far the best coworker, friend, partner and companion there is.

Dog crazy much? 

As I get back into this blogging thing, I am not really sure what it will look like, but I do plan to try and share at least once a week. I used to love having my little corner of the internet to just put my thoughts out there. 

I’ll share all my weird things I am trying out, what I am loving, what I am doing, what I am struggling with, how I am feeling. 

This week, what I am loving is Blueberries!

My parents have a little Blueberry farm on their property and let me tell you, I reap ALL those benefits. One thing that being home all the time has afforded me is the ability to make all my meals at home! Which, I already love to do, but now I get to enjoy them DAILY.

What I am loving this week is my crockpot steel oats with fresh blueberries, super simple and great for you. I don’t know about you, but getting all the vitamins I need right now is really important so I stay in the best shape I can!

Plus, who doesn’t love being able to throw something into a crockpot and forget about it? 

This recipe is seriously the easiest. I caution you that I use Steel Cut Oats, which is a lot different from normal oats. So, make sure you are paying attention to that. 

Blueberry Smoothie

All you do is get your crockpot, put 1 cup of steel cut oats in, 4 cups of liquid (I used unsweetened almond milk) and cinnamon to you liking. Cook for 8 hour on low and you are ready to rock and roll. 

Fun huh? 

I also am loving using all the blueberries for smoothies and shakes! Makes your shake a lovely color of purple.

Crockpot Steel Oats

Super easy

Ingredients

  • 1 cup steel cut oats

  • 4 cups unsweetened almond milk

  • 1 tbsp cinnamon

Directions

  • Generously spray crockpot sides before placing ingredients in
  • Put oats, milk and cinnamon in
  • Cook for 8 hours on low
