Spicy Pasta

It is Wednesday and today is my work Holiday party…so you know what that means right?! HALF DAY! I feel like I am back in elementary school where I am getting an early dismissal. It is always nice to get a break from the office 🙂

I finally got the cold weather I have been praying for but the snow is still lacking…we got a dusting of snow earlier this week but nothing you can play in haha. Send your positive foodie vibes my way for some snow…I am desperate!

I love spicy food. Any kind of spicy food, I will definitely reach for it! Every time I make pasta I tend to add a little bit of kick to it because I enjoy it. Throughout my years I have perfected a pasta that I love so much. I mix up what it is that I put in it, but it really is a good weekday meal. Quick, easy, and filling! 🙂

Ingredients for Spicy Pasta:

  • Chicken breasts, cut into strips and then halved
  • mushrooms
  • onion
  • garlic
  • olive oil
  • peppers (of your choice)
  • red pepper flake
  • salt
  • pepper
  • Rotini Pasta
  • Tomatoes, you can use fresh or canned

Start your pasta cooking in a medium pot.

To the side in a saute pan, put your garlic and olive oil in a pan and let the garlic start to brown. Place your onions into the pan and let them sweat.

yum, is there anything better than the smell of these ingredients in a pan? I say there is not!

Place in your mushrooms and let them cook for a few minutes. Place your tomatoes and peppers in next along with salt, pepper, and red pepper flake.

Let the vegetables cook for a few minutes and let some of the liquid cook off.

Add your chicken to the pan and let it cook until tender

Drain your pasta and place it into a bowl. Place your hot spicy chicken mixture on top of the pasta. Sprinkle with Parmesan and parsley..and Voilá!

It is salty, sweet, and spicy…it is wonderful! I love to make this pasta during the week because it s fast easy and it has a ton of flavors that always seem to fill my “hungry void”.
