Happy Blogging!

Now onto the detox. Still going strong people! I am feeling really good and it seems to still be going well. I had a really yummy dinner last night that I wanted to share with you. Please excuse the horrible picture! I took it with my cellphone so it is not a fabulous picture.

This is Quinoa, broccoli, spinach, and just a small amount of chicken (maybe 2 ounces). It was really delicious! It has been the best meal I have had so far. What I did was I sauteed garlic with some olive oil and then threw and onion in the pan to brown it up.

Then I placed the broccoli in the pan and added some herbs and red pepper flake. Cooked that for about 4 minutes. Added in my spinach and cooked that until it reduced in size. Then I put the chicken in (which I had precooked from previously) and added the Quinoa in (which I had cooked previously).

That was it! Super good. I was surprised at how much flavor this had even though it had no salt in it.

When I cooked the Quinoa I used free range, low sodium, fat free chicken broth and I think that helped give the dish an extra bit of taste that wouldn’t have been there if I didn’t. It was really good.

Anyways, so I am on Day 5, I am feeling good. Wednesday (Day 3) was probably the hardest day for me and I am not even sure why it was hard for me but it was. I think my body may have been adjusting or maybe it was because I was having a bad day haha. Who knows. Today I feel really good though.

Today for lunch I get fruit salad and carrots and hummus for a snack YUM! Tonight I am making stuffed bell peppers with brown rice and all sorts of yummy veggies! Everyone around me at work seems to be noticing a difference and is really supportive, even my folks have turned over a new leaf and seen how good the food is and want to try it for themselves now! haha So far, I would highly recommend anyone doing it. I have included my Menu for the past 2 days for anyone who would like to attempt it.

I hope you are all having a great week! Happy Friday!! 🙂
