Stuffed Peppers

Hello all! I am on Day 8 of the detox! I am trusting you are having a grand start to your week. Mine was not so grand, I have to admit. Work has been less than desirable for the past 2 days. Lots of issues and stress that has been really keeping me very very busy.

I wanted to update you all on my progress! So far so good! We are still going strong and it is Day 8. I can’t believe that things are still going so well but they are. This weekend was very hard for me. I am used to baking on Saturday. That is normally my routine during the weekend for me to bake something. It was very hard for me not to. I mean I could have but then I wouldn’t have been able to enjoy the outcome and that is just no fun. Anyways, still going strong..still feeling really good. Which is great! Here was my menu for Day 5&6…

One of the recipes that I made this weekend was Stuffed Peppers. I wanted to share the recipe with you because it was really good. You may certainly adapt this recipe since it is for the detox, but I thought you all might like to see it!

Ingredients for Stuffed Peppers:

  • 2 green bell peppers
  • 1/2 lbs ground turkey (organic, no hormones, 99% fat free)
  • 1/4 onion
  • 1/2 red bell pepper
  • 1/2 yellow bell pepper
  • 1/2 cup cooked brown rice
  • 1 cup chopped mushrooms
  • 1 cup fresh spinach
  • 2  small tomatoes
  • 1-2 cloves garlic

Preheat your oven to 350º

Wrap your bell peppers in aluminum foil and place in a baking dish. Bake for about 15 minutes. I added some olive oil and pepper to the outside of the peppers.

In a skillet over medium heat cook your turkey all the way through. Set aside. Heat oil and cook garlic and onion until onion has browned. Add in mushrooms, red and yellow pepper, and spinach. Add in (pre-cooked) brown rice. Add turkey. Then add in your tomatoes at the very end.

Stuff the peppers with the turkey mixture and place into the oven for another 15 minutes.

*I added some red pepper flake, basil, and parsley to this recipe for some extra flavor.
